BBQ Grilled Orange Slices
Ingredients
4 Large Oranges
Melted Butter
4 teaspoons Sugar
Instructions
Do not peel the oranges. Cut into 2.5cm/1-inch thick slices.
Dip in melted butter then place on the grill and cook over hot barbecue coals for 2-3 minutes.
Turn the slices over, sprinkle the slices evenly with sugar and continue to cook for a further 2-3 minutes.
Turn once more so the sugared sides are down and cook for 1 minute. Serve immediately.
Barbecued Peaches with Sweet Mascarpone
Ingredients
4 Fresh Ripe but firm Peaches
2-3 tbsp Melted Butter
4 teasp Caster Sugar
4 level tbsp Mascarpone
Instructions
Cut each peach in half and remove the stones.
Brush the undersides of each peach with melted butter and sprinkle with half of the sugar.
Cook over medium hot coals (rounded sides down) for 2 minutes.
Brush the cut sides (which are uppermost) with more butter and sprinkle with the remaining sugar. Turn (so the cut sides are down) and continue to cook for a further 3 minutes.
To serve – transfer to warmed serving plates (cut sides up) and place a dollop of mascarpone in the centre of each peach. Serve immediately.
Strawberry and Banana Kiwi BBQ Kabobs
Ingredients
1 tbsp Lemon Juice
1 teasp Ground Mixed Spice
2 tbsp Melted Butter
2 tbsp Maple Syrup
2 Kiwi Fruit, peeled and quartered
3 Bananas, peeled and cut into thick slices
12 Strawberries, hulled but left whole
Instructions
Place the lemon Juice, ground spice, butter and maple syrup in a small bowl and mix well.
Thread the fruit alternately onto 4 skewers and brush liberally with the maple syrup mixture.
Cook the kebabs over medium hot barbecue coals for 1-2 minutes on each side, brushing with any remaining syrup mixture, until golden brown. Serve immediately.
BBQ Bananas with Spicy Ginger Sauce
Ingredients
1 tbsp Brown Sugar
2 teasp Lime Juice
½ teasp freshly grated Root Ginger
4 Small Bananas
Instructions
With a sharp knife, make a slit in the skin of each banana from end to end. Place the bananas on the grill over medium coals and cook, turning once, for 8-10 minutes. Alternatively, place in a grill pan and cook under a hot grill for 5-9 minutes turning once.
Meanwhile, in small bowl, combine sugar, lime juice and ginger. Set aside.
To serve – place each banana on a dessert plate, open up the skin to expose the flesh then drizzle each with 1 teaspoon sauce. Serve hot.
